Why egg + rice?
Egg and Rice, or Tamago Kake Gohan, is a traditional Japanese breakfast. The dish calls for raw egg to be stirred into steaming hot rice and served almost like porridge. Growing up half-Japanese in New England, I often sought solace in my mother’s adapted version that is more scrambled egg in rice than it is traditional egg and rice. To me, egg and rice is a universal comfort food for any time of day. It’s a food you don’t have to think about that will leave you be nourished and make use of ingredients you likely have lying around in your fridge.
